Snickerdoodles

Ingredients:
2 3/4 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
1 cup butter or margarine, unsalted
2 eggs
1 1/2 cups white sugar
1/4 cup sugar plus 1 tablespoon of cinnamon

Cream butter and sugar until fluffy. Add eggs, beating one at a time, after each addition.

Sift together the flour, cream of tartar, baking soda and salt. Slowly add to the butter mixture and mix well.

Wrap dough in plastic and refrigerate for 1 hour.

Preheat oven to 400 degrees F.

Mix together 1/4 cup sugar and 1 tablespoon of ground cinnamon in shallow bowl. Roll 1 inch balls of dough into mixture and place 2 inches apart on cookie sheets.

Bake 8 to 10 minutes until lightly browned.
